  • Sift together the flour, baking soda, sugar, salt, and cinnamon in a medium bowl. Set aside.
  • Beat the eggs, then add the milk and vanilla. Whisk in the melted shortening.
  • Slowly add the wet ingredients to the dry ingredients.
  • Stir ONLY until smooth. Don't overstir!
  • Cook in a hot griddle that has a little butter in it.
  • Serve with your favorite pancake toppings... Enjoy!
